Turkish Eggs

A good nutritious breakfast that's quick to make and tastes great. Breakfast is often called the most important meal of the day, but traditional breakfasts often lack vegetables. This recipe combines the humble egg with tomatoes, onions and spices to create a flavoursome breakfast packed with goodness.

I like to have this at the weekend but you could quite easily fit it into a week day. It doesn't even have to be a breakfast as it would be perfectly suitable for lunch or dinner.

  • 1 Onion
  • 1tbsp Olive Oil
  • 1tsp Paprika
  • 1tsp Cumin
  • 1tin Chopped Tomatoes
  • 4 Eggs
  • 2 Spring Onions
  • 1 Thai Chilli Pepper
  • Finely dice the onion
  • Heat the oil in a large skillet to a medium heat and add the spices to toast for one minute
  • Add the onions and fry until soft
  • Add the chopped tomatoes and bring to a simmer
  • With a wooden spoon, create four wells in the mixture and crack an egg into each one
  • Gently cook until the eggs are done, you may wish to put the pan under the grill to finish them off
  • While the eggs are cooking, slice the spring onions and the chilli pepper
  • Serve the eggs and sprinkle the spring onions and chilli on top
